Rice Kernel used to love cooking dinner with me, as my “helper.” It’s fallen out of favor the last 6 months or so – he’s too busy rushing to his train and lego room, eager for me to finish preparing and cooking dinner so that I can join him. I thought baking projects would inspire my little boy to stand on a chair next to me in the kitchen and it has, with mixed results. The truth is, he doesn’t really care for sweet breads, muffins, cakes, or pies. He’s an oddball that way. But candy? Caaandy (that’s how Rice Kernel says it). That’s his weakness. Recently, after repeated requests to try coconut, Rice Kernel and I made Almond Joys. It was a big hit. I knew marshmallows would be even more exciting – I mean, how could a kid not enjoy watching egg whites and sugar turn into white, fluffy clouds? And did I mention the mess of powdered sugar involved?
I was probably a bit more excited than Rice Kernel. Truthfully, he left me for about 10 minutes in the middle of cooking sugar and beating the sugar to go play with legos. It wasn’t until I was shrieking with joy that the sugar was fluffy that he came by again. But, by then, he was hooked. And eager to dust the pan and the candy with powdered sugar. We had great fun cutting out candy with cookie cutters. And even more fun eating these simple delights.
