My husband has always been fond of Mounds and Almond Joys. I, on the other hand, have never fully understood the allure of coconut. I enjoy the taste, but I think there are better textures to enjoy and wiser calories to spend! Recently, Rice Kernel asked me to buy coconut. Random request, I thought. Until I realized “coconuts” kept popping up on his cartoon-of-the-moment, Jack and the Neverland Pirates. I debated about buying real coconuts, shredding the meat, etc. until one afternoon, while visiting Grandma’s gelato store, Rice Kernel stumbled upon homemade coconut gelato. It was a hit and it seemed to satisfy his craving. Then, a few days later he said, “You never bought me coconut.” The boy never forgets.
I asked him if he wanted a real coconut. He told me it probably wouldn’t taste good. Smart. So I decided, in honor of Halloween, we would make our own almond candy: almond joys. And even if Rice Kernel turned his nose in disgust, FHE would probably take care of the leftovers.
In the end, these were a hit. From a production standpoint Rice Kernel loved getting his hands dirty – literally. From a taste standpoint, they were similar to the original – a bit “looser” but just as delicious. From an aesthetic standpoint…. you be the judge. But judge through the eyes of a 4-year-old =)
