I love the taste and smell of all meats barbecued. But it is not often we indulge in this southern delight. For one, there’s a lack of good ‘cue near us. Second, it’s not the lightest fare made for frequent consumption. Typically laden with sugar and sodium, barbecue is a treat for us – one that is best served with soft, white bread, an extra squeeze bottle of sweet, savory sauce nearby, and a pile of napkins.
This is a recipe meant to mimick the flavors of barbecue with healthier ingredients. It comes together simply and you can adjust the salt, sweetness, and spice to your liking. Delicious on a bun or with cole slaw, tonight the meat is spread onto a whole wheat crust for pizza night.
Barbecue Pulled Chicken Pizza
Barbecue pulled chicken, recipe here
pizza dough, store-bought or homemade
1-2 cup shredded cheese
vegetables of your choosing (we used grated zucchini today)
- Prepare chicken and dough, if using homemade.
- Roll out dough to desired size. Top with cheese, chicken, and vegetables and bake for 10-12 minutes, until edges are golden and cheese is melted.
